Shawarma Spiced Eggplant

We often feel that eggplant is underrated at the dinner table. These spongy fruits (botanically) absorb flavors from seasonings and sauces extremely well and are a great base for vegetarian dishes.

This easy roasted eggplant is perfect for a weeknight meal. Taking just a few minutes to put together, all you need to do is put it in the oven and forget about it until the timer goes off.

Serve this as a side dish to your main course or have it with some pasta dressed with olive oil, salt, and pepper for a simple and delicious vegetarian meal. It can be easily doubled to serve more people, so it works great for large gatherings and dinner parties. Simply pull out that baking sheet and get prepping!

This recipe serves 4.

Ingredients

1 lb eggplant (1 large fruit)
1/2 tsp kosher salt
2 tbsp Perfectly Seasoned Turkish Seasoning
3 tbsp + 1 tbsp olive oil, separated
1 lemon
Black pepper
Freshly chopped parsley for garnish
Crumbled feta (optional)

Directions

Position a rack in the middle of the oven and preheat to 400°F. Line a baking sheet with foil and lightly grease with 1 tbsp olive oil. Set aside until ready to use.

Cut the eggplant into 1″ cubes and place into a bowl. Sprinkle the salt over the pieces and toss. Let sit for 5-10 minutes; some moisture will release from the eggplant as it sits. Drizzle the remaining 3 tbsp of olive oil over the eggplant and toss to coat evenly, then sprinkle
the Turkish Seasoning over top. Toss again until each piece is evenly covered in spices.

Spread the eggplant onto the sheet in one even layer. Roast 20-24 minutes, tossing and rotating halfway through, until the eggplant is tender.

When eggplant is cooked, pull the baking sheet from the oven and squeeze the juice from half a lemon over the eggplant and season with freshly cracked pepper. Toss again to coat and garnish
with chopped fresh parsley and feta, if desired.

Serve eggplant as a side, toss it together with warm pasta for a full meal or cold pasta for pasta salad, add to hearty vegetable mixes, or enjoy on its own with some toasted bread.
