Game Day Lamb Sliders

The Presidio is the most forested neighborhood of San Francisco, so we took those scents and flavors and bottled them up for you. Juniper, thyme, rosemary, and fennel highlight the rich flavors of red meats like lamb, beef, venison, and bison.

Whether you’re cooking for a big game, hosting a casual get-together, or just making a fun dinner for the family, these sliders are going to be a huge hit. Easy to put together, thoroughly flavorful, and sure to please a group!

Ingredients

2 lb ground lamb
2 tbsp Presidio Seasoning
1/2 cup white or yellow onion, minced
1 tsp kosher salt
3-4 tbsp mayonnaise
6 slices American or cheddar cheese
12 sweet dinner rolls or slider buns

Directions

Position a rack in the center of the oven and preheat to 400°. Line a 9 x 13 inch pan with aluminum foil, going up the sides by 1 inch.

In a mixing bowl, combine the ground lamb, Presidio Seasoning, minced onion, and kosher salt. Work the meat together with the seasonings until just evenly mixed, being careful not to overwork the lamb.

Press the mixture into an even layer on the bottom of the prepared 9 x 13 inch pan. With a chopstick or skewer, poke holes about 1 inch apart across the surface of the meat. Bake the lamb until cooked through, about 25 minutes.

Meanwhile, slice the rolls in half if they are not already cut. If the rolls are attached, try to keep them together. Spread mayonnaise across the surface of the bottom buns. Set aside until ready to assemble.

When the lamb has finished cooking, remove the pan from the oven. The meat should have shrunken and pulled away from the sides. Drain off any fat, then place the slices of cheese on top. Return the pan to the oven for 2 minutes until the cheese has melted.

To assemble, place the top buns on top of the slider patties. Invert the entire pan onto a cutting board and carefully remove the pan. Peel the foil from the meat, then place the bottom buns on top. Invert the sliders again so they are right side up. Using a knife, cut down between each bun to create 12 individual sliders.
