Making the Mission Seasoning was one of the easiest parts of the San Francisco Series. We knew it had to feature good peppers and classic Latin American flavors. Whether cooking with it or rimming a glass for margaritas, this is one of our favorite seasonings.
Fajitas are a quick and simple dinner choice that easily feeds many people. Using shrimp—a very fast cooking shellfish—means this meal comes together in only about half an hour.
Serve the fajitas as below or add more to fill it out. Sliced avocados, Mexican rice, black beans, and pico de gallo are all welcome to this party!
Ingredients
1 1/2 lb shrimp, shelled and deveined
2 tbsp + 1 tbsp vegetable oil, separated
1 tbsp Mission Seasoning
1 medium yellow onion
2 medium red bell peppers
8 corn or flour tortillas
Salt
Freshly chopped cilantro
Directions
In a mixing bowl, combine shrimp, oil, and Mission Seasoning. Toss to coat evenly and set aside.
Cut the onion in half from root to tip, then cut the onion into long strips about 1/4 inch wide. Set aside. Cut the bell peppers into similarly sized strips and set aside with the onions.
Warm the tortillas by wrapping them in a dish towel and placing on a plate. Microwave on high for 20-30 seconds. Keep them wrapped to allow them to steam.
In a large skillet over medium-high heat, add 1 tbsp vegetable oil. When the pan is hot, add the onion and bell pepper. Saute 4-5 minutes until the vegetables are soft and begin to char. Transfer vegetables to a bowl or plate and set aside.
Using the same pan, add the shrimp in one even layer. Cook 2-3 minutes on each side until the shrimp is cooked through.
Add the vegetables back to the pan and stir together. Season with additional salt to taste. Garnish with fresh chopped cilantro and serve with warmed tortillas.
